This recipe was one of the first we learned to alter, simply because we didn’t have many of these ingredients on hand.

I had recently learned that you can easily search in google for a substitute. Cucumbers were in season, so I figured there was no harm in testing the recipe.
I sincerely hope you enjoy it as much as we do! It is now considered a family favorite.
To try: It just occurred to me that the liquid in the finished recipe might make an excellent salad dressing. I just added trying that to my list!

This must be one of the lowest calorie dishes we make. It’s tasty, lasts a long time, and is very low calorie.
For all of these reasons, this recipe is a hit in our kitchen.
One downfall, though, is the fighting over the last portion. I try to hide it in the back of the fridge so the family forgets about it. There is no shame in my game.
